You can find pre-packaged butternut squash “noodles” in most larger grocery stores and they are absolutely perfect for those nights when you need to get dinner on the table quickly.

Ingredients for this Recipe :
- 1/4 cup extra virgin olive oil
- 4 cup pre-packaged butternut squash “noodles”
- 2 tbsp fresh sage, chopped
- 2 tsp ground cinnamon
- Sea salt and black pepper, to taste
How to Make Butternut Squash Noodles :
Step One:
Heat two tablespoons of olive oil in a large skillet over medium heat. Add butternut squash noodles and cook for 4-5 minutes, turning frequently to ensure they cook evenly. When noodles are slightly softened, remove them from the pan and set them aside. Keep warm.
Step Two:
Add remaining olive oil to the pan, along with chopped sage and cinnamon. Cook until fragrant, approximately 2-3 minutes, stirring frequently.
Step Three:
Return butternut squash noodles to the pan and toss to coat in sage-cinnamon mixture. Remove from heat and season with salt and black pepper, to taste, and serve.

Serving Suggestions :
